How do you calculate baker's percentages for pizza dough?
Divide each dough ingredient's weight by the total flour weight and multiply by 100. Flour is the 100% reference, including every flour in a blend. To work backward from a desired dough weight, add all baker's percentages, divide that sum by 100, then divide the desired weight by that factor. This calculates ingredient quantities, not a tested recipe or fermentation schedule. Do not taste raw flour or dough.
The useful distinction is between three questions: “What are this recipe's ratios?”, “How much can I make with this flour?” and “What ingredients produce my target dough weight?” Each starts from a different known quantity.
What belongs in the denominator?
The denominator is the weight you divide by. In baker's percentages, it is total flour—not finished dough, not flour plus water, and not just the largest flour ingredient.
King Arthur Baking's explanation of baker's math counts the different flours together and expresses other ingredients against that combined amount. It also distinguishes baker's percentages from percentages of the whole batch.
For our original calculation exercise, suppose the flour is 320 grams bread flour plus 80 grams whole-wheat flour:
- Total flour: 320 + 80 = 400 grams.
- Bread flour: 320 ÷ 400 × 100 = 80%.
- Whole-wheat flour: 80 ÷ 400 × 100 = 20%.
- Combined flour: 80% + 20% = 100%.
Do not count the 400-gram subtotal again when adding the ingredient rows. The subtotal describes those two flours; it is not a third addition.
How do you convert a weighed formula into percentages?
The following is an illustrative ledger, not a tested dough recipe. Its ingredient amounts were chosen to make the arithmetic inspectable. No mixing, proofing or baking method is supplied, and its yeast amount is not a recommendation for your schedule.

The table uses total flour once. If you want the blend shown individually, replace its first row with the 320-gram and 80-gram rows, retaining the same denominator throughout.
The basic percentage method is weight-based. Convert a recipe from its actual documented weights; do not invent gram equivalents for an unspecified cup of flour or spoon of salt.
Why does the total exceed 100%?
Because each percentage compares an ingredient with flour. It does not describe that ingredient's share of the whole dough.
In this exercise, the dough weighs 706 grams. The 8 grams of salt are:
- 2% of the 400 grams of flour;
- approximately 1.133% of the 706-gram batch.
Both calculations can be correct, but they answer different questions. Label the denominator before comparing numbers. A note saying only “2% salt” normally means baker's percentage in a dough formula; it does not mean 2% of the finished dough.
The same distinction prevents the common error of taking 2% of a desired 1,000-gram batch and adding 20 grams of salt.
How do you calculate ingredients for a target dough weight?
Start with the total percentage, including flour. Here it is 176.5%.
Convert it to a multiplier:
176.5 ÷ 100 = 1.765
Every gram of flour therefore corresponds to 1.765 grams of total ingredient mass in this illustrative formula.
For a 1,000-gram target:
total flour = 1,000 ÷ 1.765 = approximately 566.572 grams
Then multiply that flour result by each percentage expressed as a decimal:

Keep the unrounded flour value in the calculation; the displayed numbers are rounded for reading. Algebraically, the unrounded ingredient weights sum to exactly 1,000 grams.
For the same 80:20 flour blend, allocate the calculated flour between bread flour and whole-wheat flour. That gives approximately 453.258 grams and 113.314 grams respectively. Their combined amount, not either flour alone, remains the reference.
What does rounding change?
Rounding is a recorded change, not invisible tidying. Here is what happens if the example weights are rounded to whole grams:
567 + 397 + 11 + 17 + 6 + 3 = 1,001 grams
The resulting batch is one gram above the target. More importantly, the 3 grams of yeast differ proportionally from the calculated 2.833 grams, even though the total error looks small.
At one decimal place, the same list is:
566.6 + 396.6 + 11.3 + 17.0 + 5.7 + 2.8 = 1,000.0 grams
That matching sum does not mean every original ratio survived exactly. Salt is now 11.3 ÷ 566.6 × 100, approximately 1.994%, rather than exactly 2%.
Use a scale suitable for the quantities being weighed and follow its instructions. A display's number of decimal places does not itself establish accuracy. Do not solve an unreadably small yeast quantity by silently replacing it with a spoonful.
What if you know the flour weight instead?
There is no reverse calculation needed. Multiply the available flour by each decimal percentage.
For an illustrative 220 grams of flour, the ledger becomes:
- Water: 154 grams.
- Salt: 4.4 grams.
- Dough oil: 6.6 grams.
- Sugar: 2.2 grams.
- Instant yeast: 1.1 grams.
- Total ingredient mass: 388.3 grams.
Check it another way: 220 × 1.765 = 388.3. This cross-check catches a missing ingredient or a percentage entered as 70 instead of 0.70.
Choosing the appropriate dough weight for a pan is a separate decision. Keep pan area and desired thickness in a separate note; the dough-lab section covers those neighbouring questions.
Which ingredients stay outside this calculation?
Keep oil used to coat the pan, sauce, cheese and toppings on a separate preparation list. They do not belong in this dough ledger merely because they eventually share a pizza.
Likewise, do not treat a ready-made starter or preferment as unexplained extra flour-free mass. A complete formula must account for its components without counting them twice. Our example has no starter, eggs, milk or other compound ingredients.
Percentages also do not authorise changing yeast type, switching flour or extending fermentation. What should go on your calculation card?
Record the source recipe, ingredient weights, total flour, individual percentages, total multiplier, intended batch weight, calculated weights and actual rounded weights. Finally, add the rounded weights and recompute any ratio where the rounding matters.
Keep this exercise on paper. If preparing food, the FDA's flour-handling guidance says not to taste raw flour or dough, to separate raw ingredients from ready-to-eat food, and to wash hands and equipment after handling. Do not attempt home heat-treatment to make flour safe to eat raw. Follow complete recipe and package cooking instructions; these numbers provide no cooking or storage clearance.
